Mint thins

Gluten free, processed sugar free and Vegan. That’s right no eggs or dairy either!

Sometimes a treat is needed even when we are healing or maybe the kids just want a healthy treat. These are a healthier alternative to the shop bought products and also some of the unhealthier recipes out there too. Just pure unprocessed ingredients.

BASE
1 cup almond flour
2 tbsp of coconut oil
2 tbsp cacao powder
2 tbsp 100% maple syrup
Half a tsp of peppermint extract (I used doterra essential oils)

CHOCOLATE
1 cup of dark chocolate chips/vegan *mylk chocolate (use half a cup if only coating top of biscuit)

2 tsp coconut oil ( 1tsp if only using half chocolate quantity)

1/4 tsp of peppermint extract

DIRECTIONS

Mix base ingredients to form a dough and refrigerate for 15 mins

Pre heat the oven to 175 degrees celsius

Roll the dough in between two sheets of baking paper to about 1/4 inch thick and use a cookie cutter or small round glass to cut out the the biscuits.
Place In the oven for 15 mins

Allow to fully cool.

CHOCOLATE TOPPING
Melt chocolate then add in coconut oil and peppermint extract

Dip each biscuit into the chocolate mix and refrigerate for 30 mins.
