This is what you call a “proper chip butty” aka a Potato sandwich! This is super delicious! It is not only guilt free but also healing too, potatoes are a great source of nutrients and in particular contain lysine and tyrosine which are both extremely helpful in producing thyroid hormones.
1 cup cashews
1 tsp olive oil
2 garlic cloves
¼ teaspoon sea salt
1 cup water
Add all the ingredients to the blender and blend until smooth, store in the refrigerator until needed.
The potatoes were done in the airfryer using 1/4 of a teaspoon of extra virgin olive oil a pinch of salt and a sprinkling of rosemary. Slice one large potato side ways and rub in a little oil before adding to the airfryer.
The filling is made of spinach, basil, tomato, cucumber and avocado. I mixed the avocado with lemon and pepper but you could also just slice some avocado and leave as is. This was finished off with a dollop of garlic aioli. The inspiration for this recipe comes originally from @heyashfoster.
