Sweet Potato fries with cashew cream and homemade guacamole.
Dairy-free, gluten-free and vegan.
The sweet potatoes have been air fried with no oil to keep it as healthy as possible. I absolutely love the air fryer and tend to throw in most thing, like mushrooms and falafel too.
This dish can be finished off with chopped tomato, coriander, spring onions and a wedge of lime if you like.
1-2 ripe avocados, mashed with a fork
1 tomato, chopped
1 bunch of cilantro(coriander), chopped
1/4 to 1/2 of a red onion
1 lemon or 2 limes, squeezed
1 clove of garlic, minced
a pinch of sea salt and black pepper
Mix all ingredients together in a bowl and refrigerate ready for serving.
1 cup cashews
2 tablespoons olive oil
3 garlic cloves
¼ teaspoon sea salt
½ to 1 cup water
Blend until smooth and refrigerate until ready to serve. The cashew cream will keep for up to a week in the fridge or you can freeze a batch and defrost when needed.
